Happy New Year’s Eve! As you ring in the new year, I wish you health and peace, and of course this party-ready chocolate and salted caramel Linzer cookies.
Ingredients
⅔ cup butter
¾ cup sugar
1 ½ tsp baking soda
½ tsp salt
1 tbsp heavy cream
1 tsp vanilla
½ cup cocoa powder
2 ¼ cups flour
1 cup powdered sugar
10-12 wrapped caramel squares
Flaked sea salt
Directions
Preheat oven to 350° F. Combine butter and sugar in a mixer until creamy. Mix in vanilla, heavy cream, and salt. Slowly incorporate cocoa powder and flour. Form dough into a ball. Cover and chill for 30 minutes. Roll chilled dough out on a floured surface until it’s 1/8th of an inch thick. Cut out the desired shape with a cookie cutter. Then use a smaller cookie cutter to cut a shape (circle, star, heart, etc.) into the center of half of the cookies. Bake at 350° F on a parchment-lined cookie sheet for 8 minutes. Allow cookies to cool. While cookies are cooling, melt caramels over medium-low heat on the stove. Spread a layer of caramel on the whole cookie. Place the cutout cookie on top, and sprinkle flaked sea salt on the warm caramel.
