Gam’s Cinnamon Cookies

¾ cup ¾ unsalted butter
½ cup ½ granulated sugar
½ cup ½ brown sugar
1 tsp 1 vanilla
1 1 egg
1 tsp 1 salt
1 tsp 1 baking soda
3 tsp 3 cinnamon
2 cups 2 flour
cinnamon and sugar for rolling
Directions
- Preheat oven to 350º F.
- In an electric mixer, cream the butter and sugars together.
- Then slowly beat in vanilla and the egg.
- Combine the salt, baking soda, cinnamon, and flour and mix on low speed until a soft dough begins to form.
- Cover the dough and refrigerate for 1 hour, or until it is firm enough to roll into balls.
- Once the dough has chilled, shape into one-inch balls and roll in cinnamon and sugar.
- Place on a parchment-lined baking sheet and bake for 10 minutes at 350°F.
- Remove the cookies from the oven and let them cool slightly before transferring them to a rack.
