Okay, okay, I know I said that chocolate and peppermint are my favorite pairing, but cranberry and orange are a very close second. I love the bright tang of the cranberries, the fresh zest of citrus, and the sweetness of the white chocolate chips in this cookie recipe. These cookies are proof that there is no such thing as second best.
Ingredients
½ cup butter
½ cup sugar
½ cup brown sugar
1 egg
1 tsp rum extract
1 tsp baking soda
½ tsp salt
Zest and juice of one small orange
1 ¾ cups flour
1 cup dried cranberries
2 cups whites chocolate chips
Directions
Preheat oven to 350° F. Cream butter and sugars together in a mixer. Add in egg, rum extract, zest, and juice of a small orange, salt, and baking soda. Mix until well combined. Slowly incorporate the flour. Once the batter has formed, stir in white chocolate chips and cranberries. Drop 2-inch scoops of cookie dough onto a parchment-lined baking tray and bake at 350° F for 8-10 minutes.
