Did you know that today is National Brownie Day? I didn’t, but trust me, I’m going to rectify that mistake with these chocolate peppermint brownie cookies. Are you team cookie or team brownie? Here’s the good news. It doesn’t matter. These are cookies that taste exactly like brownies! It’s the best of both worlds in every bite.
Ingredients
For the cookies:
½ cup butter
2 cups semi-sweet chocolate chips
3 eggs
½ cup brown sugar
½ cup white sugar
1 tsp salt
1 tsp baking soda
1 ½ tsp peppermint extract
1 ½ cups flour
For the frosting:
¼ cup butter
4 oz cream cheese (at room temp)
1 tsp peppermint extract
2 ½ cups powdered sugar
White chocolate peppermint candies
Directions
Preheat oven to 350° F. Melt butter and semi-sweet chocolate chips, stirring frequently, until fully melted and smooth. Beat eggs, sugars, salt, baking soda, and peppermint extract. Add melted chocolate. Slowly incorporate the flour. Drop 2-inch balls onto a parchment-lined cookie sheet. Bake at 350° F for 10 minutes. Cookies will flatten. Allow to cool completely.
While the cookies are cooling, use a whisk attachment to beat butter, cream cheese, peppermint extract, and powdered sugar into a light and airy frosting. Frost cooled cookies and sprinkle with crushed white chocolate peppermint candies.
