This cookie creation came about for two reasons. First, my dad is bananas for pistachios. Every year I pack his stocking with bags of the salty green nuts, so I wanted to make a cookie to satisfy his pistachio cravings. The second reason I created this recipe is due to time. If you’re like me the holiday season is fun, yet packed with activities. These cookies are super easy, can be baked in less than twenty minutes from start to finish, and are sure to please any pistachio-loving palate. No one will ever know that a sugar cookie mix and a box of pistachio pudding are the base for these divinely nutty treats. Pinkie swear, let’s never let the secret out.
Ingredients
1 package sugar cookie mix
1 cup butter
1 egg
1 tsp almond extract
1 package pistachio pudding
¼ cup honey salted pistachios
Directions
Preheat oven to 350° F. Mix butter, egg, cookie mix, almond extract, and pistachio pudding on medium speed until well combined. Drop 2-inch balls on a parchment-lined baking tray and press 5-6 pistachios in the center of each ball. Bake at 350° F for 10-12 minutes.
