This holiday season I wanted to share a gift with you and after much deliberation I finally decided that I would spend the next twelve days baking and sharing the most requested recipes from the Bakeshop Mysteries. These are recipes that Jules and the team at Torte bake in the series but never made the final cut to be included in the recipe section of each book.
When I sit down to write a book, often the food is whatever comes to mind. I might have a hankering for a chocolate éclair or a gooey cinnamon roll, but it isn’t until I’ve finished multiple drafts and edits that I go back through the manuscript and decide what recipes I want to recreate in my home kitchen. Since Meet Your Baker published in 2014 I don’t think a week has gone by when I haven’t received email from a reader begging for this recipe for Lime Mint Cupcakes. I’m so excited to share it with you today as we kick off 12 Days of Cozy Bakes! You can enter the giveaway below the following recipe…
Lime Mint Cupcakes
For the cupcakes:
½ cup butter
¾ cup sugar
1 tsp vanilla
2 eggs
1 ¼ cup flour
1 ½ tsp baking powder
1 tsp salt
½ cup coconut milk
Zest and juice of one lime
3-4 sprigs of fresh mint—chopped
For the frosting:
1 cup butter
3 – 3 ½ cups powdered sugar
1 tsp vanilla
Zest and juice of ½ a lime
Fresh mint for decorating
Directions:
Preheat oven to 350 degrees. Cream butter and sugar together with an electric mixer or by hand. Add vanilla and eggs and mix until smooth. Add flour, baking powder, and salt. Slowly add in coconut milk. Once batter is thick and creamy, mix in zest and lime juice, and fresh mint. Line cupcake tin with wrappers or coat with cooking spray. Fill batter ¾ full and bake at 350 degrees for fifteen to twenty minutes or until cupcakes are golden brown and center is cooked through. Remove from tray immediately and allow to cool.
As cupcakes are cooling cream butter in an electric mixer. Add in a cup of powdered sugar and vanilla and beat on low. Slowly add in remaining sugar and juice and zest of lime. Beat on high for five minutes or until the frosting is light and fluffy. Frost cooled cupcakes and finish with a sprig of mint.
