Full disclosure: Dark chocolate and peppermint are my dream pairing. Could I live on the combination? Maybe, but I’ll settle for a plate of these meltaways. They’re light, buttery, and will melt in your mouth with chocolately peppermint goodness. I recommend using large dark chocolate morsels so that every bite is filled with decadent chocolate and a bright, minty finish. If you’re a fan of chocolate and peppermint like me, you might want to bake a double batch!
Ingredients
1 cup butter
½ cup powdered sugar
¼ cup cornstarch
1 ½ cups flour
½ tsp salt
2 tablespoons heavy cream
1 tsp peppermint extract
1 cup dark chocolate morsels
Crushed peppermint bark
Directions
Preheat oven to 350° F. Cream butter and sugar together in a mixer. Add peppermint extract, salt, and heavy cream. Slowly incorporate cornstarch and flour. Mix well. Roll dough into 1-inch balls. Place on a parchment-lined baking sheet. Press 5-6 chocolate morsels into the balls to help flatten. Sprinkle with crushed peppermint bark. Bake at 350° F for 8-10 minutes or until the centers are done.
