I’ve been in a scone mood with the upcoming release of Sticks and Scones on August 20th. My current obsession is these orange cardamom scones. I mean, anything with cardamom is a win in my book.
True story. We changed the title of Sticks and Scones after multiple rounds of edits and after I had created the recipe list. There was not a single scone to be found in the story, though, so I had to go back through and make sure Jules and the team at Torte had them featured on the menu. These scones would certainly be front and center in the pastry case. Enjoy!

¼ cup granulated sugar
1 tbsp baking powder
½ tsp salt
1 tsp ground cardamom
1 zest of one large orange
½ cup (1 stick) cold unsalted butter, cut into small cubes
½ cup heavy cream, plus more for brushing
1 large egg
1 tsp vanilla extract
¼ cup orange marmalade, slightly warmed
2 tbsps turbinado sugar

Hi! Love the books, the most recent series and the orange cardamon scones! I just have a bit of a problem… I am lactose intolerant which means I can’t digest any milk or milk products ( you would be surprised to find out what products contain milk, regular or dried! With this challenge, can you suggest a non-dairy substitute for the heavy cream? I have the butter substitute solved already.

Could you use full fat coconut milk? Or maybe non-dairy yogurt thinned with a little water? Maybe even orange juice would work if you increased the amount of butter substitute? Just some ideas. I hope you are able to make these–they sound fantastic!
