Are you still loving 31 Days of Baking, or are you ready to toss your mixer out of the kitchen? If you’re not ready to murder your rolling pin, then I suggest whipping up a batch of these oatmeal caramel truffles. They are sweet, slightly salty, and freeze beautifully for the new year.
Ingredients
½ cup butter
½ cup sugar
½ cup brown sugar
1 egg
½ tsp baking soda
½ tsp salt
½ cup oats
1 ¼ cups flour
½ cup chopped pecans
½ package Nestle Toll House sea salt caramel baking truffles
Directions
Preheat oven to 350° F. Cream butter, sugar, and brown sugar on medium speed. Add in egg, baking soda, salt, and oats. Slowly incorporate the flour. Stir in chopped pecans and sea salt caramel truffles. Drop 1-inch scoops on a parchment lined baking tray. Bake at 350° F for 10-12 minutes.
