It’s day 3 of my 31 Days of Pie and for today, I’ve chosen to make this simple, yet decadent, Chocolate Mousse Pie inspired by the cover of my upcoming cozy mystery, LIVE & LET PIE (the 9th book in my Bakeshop Mystery Series), as well as my son’s love of chocolate cream pie.
Chocolate Mousse Pie
Ingredients
For the chocolate crumb crust
¼ cup butter, melted
10-12 chocolate graham crackers
For the chocolate mousse
Two 3.7 ounce boxes of chocolate pudding (I recommend Godiva chocolate)
2 ½ cups heavy cream
For the whipped cream topping
1 cup whipping cream
1 teaspoon vanilla
¼ cup sugar (or to taste)
¼ cup mini chocolate chips (for final topping)
Directions
Preheat oven to 350° F. For the chocolate crust, break crackers into smaller pieces and add them to a food processor. Pulse until the crackers are fine crumbs. Add melted butter and pulse a few more times to blend. Press blended mixture evenly into a pie plate (including up the sides) and bake for 10 minutes. Set aside and allow to cool completely. Whip together pudding mix and heavy cream. The pudding will be thick-more like a mousse than pudding. Spread onto cooled crust. Add whipping cream, sugar, and vanilla into a mixer and whip on high until it forms smooth peaks. Spread onto the chocolate mouse and finish by sprinkling with mini chocolate chips.
