I wanted to bake a pie in honor of my friends and readers who celebrate Hanukkah. This is a quick and easy take on my favorite buttery sugar cookie in pie form. Wishing you a wonderful season of beauty and light!
Sugar Cookie Pie
Ingredients
For the cookie crust
1 cup butter, softened
½ cup sugar
1 egg
2 teaspoons almond extract
¼ teaspoon salt
2 ¼ cups flour
For the frosting
½ cup butter
1 teaspoon vanilla extract
1 ½ cups powdered sugar
Directions
Preheat oven to 325° F. Grease one pie plate. Start making the cookie crust by mixing the softened butter and sugar at low speed until they cream together. Add the egg, almond extract, and salt. Slowly incorporate the flour. Press cookie dough into the bottom of the pie plate. Bake at 325° F for 25 to 30 minutes or until the center is baked. If the edges of the cookie crust begin to brown before the center is set, cover with tin foil to prevent burning. Set aside crust to allow to cool completely. While cookie crust is cooling, whip butter in a mixer until smooth and creamy. Add in vanilla. Slowly add in powdered sugar. Once the powdered sugar has been incorporated mix on high for 5 minutes. Frost cooled cookie crust and decorate with sprinkles or fancy, colored sugars.
