It’s Taco Tuesday! 🌮 Here’s my take on a taco pie made with a spicy tortilla chip crust and layers of all your favorite taco fillings. This one vanished in my house. It’s a quick and tasty alternative to your traditional taco night.
Taco Tuesday Pie
Ingredients
For the crust
2 cups of tortilla chips
¼ cup butter, melted
½ cup Colby jack cheese
1 tsp cumin
1 tsp chili powder
1 tsp garlic powder
For the taco filling
2 chicken breasts (cooked and shredded)
1 ½ cups Colby jack cheese (shredded)
1 15 oz can refried beans
1 jar salsa
Black olives
Fresh cilantro
Optional sides: Avocado, sweet peppers, salsa, and sour cream
Directions
Preheat oven to 375° F. Pulse chips, melted butter, ½ cup cheese, and spices in a food processor until they are finely ground. Press into a pie plate. Bake for five minutes. Remove the crust and sprinkle the bottom with ½ cup Colby jack cheese. Return to the oven for five more minutes, or until the cheese has just melted. This will help form the crust. Next spread refried beans for the first layer of the pie. Follow with salsa, chicken, remaining cup of cheese, and black olives. Bake for fifteen minutes. Sprinkle with fresh cilantro. Serve warm with your choice of garnishes.
