½ cup butter ¼ cup brown sugar ¼ cup sugar 1 tsp peppermint extract 1 egg ½ tsp salt ½ tsp baking soda 1 ½ cups flour 1 package peppermint M&M’s
Preheat oven to 350° F. Cream butter, sugars, and peppermint extract on medium speed. Add egg, salt, baking soda, and flour. Once the batter has formed stir in M&M’s. Coat a cast-iron skillet with non-stick baking spray. Press batter into the skillet. Bake at 350° F for 20 minutes or until the cookie is golden brown. Allow to cool, cut into slices, and serve.
