Question of the day: is hot chocolate better with marshmallows? Answer: YES! Hot chocolate is also better with a platter of hot chocolate cookies, overflowing with gooey marshmallows. Today is National Cocoa Day, which is the perfect excuse to bake a batch of hot chocolate cookies and curl up on the couch with a steaming cup of cocoa.
Ingredients
1 cup butter
1 cup sugar
1 cup brown sugar
1 tsp vanilla
2 eggs
1 tsp salt
1 tsp baking soda
¾ cup cocoa powder
3 cups flour
2 cups semisweet chocolate chips
2 cups mini marshmallows
Directions
Preheat oven to 375° F. Cream butter and sugars together in a mixer. Add in vanilla, egg, salt, and baking soda. Mix until well combined. Slowly add in cocoa powder ¼ cup at a time at low speed. Once cocoa has been incorporated, add flour and mix until the dough is firm. Stir in chocolate chips and mini marshmallows. Roll dough into 2-inch balls and place on a parchment-lined baking sheet. Parchment is important as marshmallows will get sticky! Bake at 375° F for 8-10 minutes.
