Today is my husband’s birthday! Happy birthday! With a birthday just two days before Christmas my in-laws always made sure to celebrate his birthday separately. That meant birthday wrapping paper, a special birthday dinner, and a birthday pie—pecan pie. I spiced up his birthday classic with some caramelized pecans and a few splashes of bourbon. This pairs well with a scoop of vanilla ice cream or a bourbon butter sauce.
Bourbon Pecan Pie
Ingredients
1 pre-made pie crust
1 ½ – 2 cups caramelized pecans
3 eggs
1 cup brown sugar
¼ cup butter, melted
2 tbsp bourbon
1 tsp vanilla
1 tsp salt
Directions
Preheat oven to 375° F. Cover pie plate with crust and poke holes in the bottom with a fork. Set aside. Chop caramelized pecans into rough pieces and fill the bottom of the pie crust. In a separate bowl, whisk eggs, brown sugar, butter, vanilla, bourbon, and salt until frothy. Pour over pecans. Bake at 375° F for 30 minutes.
