It’s no secret that cookie design is not my strong suit. Words are my medium. While my baked goods might taste delicious, they don’t always look beautiful. However, that is not the case with Linzer cookies. These gems are so dainty and pretty. Regardless of your artistic abilities, you’ll definitely be able to make these jam-filled cookies look like works of art.
Ingredients
⅔ cup butter
¾ cup sugar
1 tsp vanilla
1 tbsp heavy cream
1 egg
½ tsp cloves
½ tsp cinnamon
½ tsp salt
1 ½ tsp baking soda
2 ¼ cups flour
1 cup powdered sugar (for dusting cookie tops)
½ cup apricot and cherry jam
Zest of one lime
Directions
Preheat oven to 350° F. Combine the butter and sugar in a mixer until creamy. Add cinnamon, cloves, salt, heavy cream, vanilla, and zest of lime. Mix well. Slowly incorporate the flour. Form dough into a ball. Cover and chill for 30 minutes. Roll chilled dough out on a floured surface until it’s ⅛” thick. Cut out the desired shape with a cookie cutter. Then use a smaller cookie cutter to cut a shape (circle, star, heart, etc.) into the center of half of the cookies. Bake at 350° F on a parchment-lined cookie sheet for 8 minutes. Allow cookies to cool. Spread a thin layer of jam on the cookie bottoms. Dust the tops with the cutout centers with powdered sugar and stack them on top of the jam-covered cookie bottoms.
