When I found this recipe from Nordic Food & Living for a marzipan and apple pie, I knew I had to bake it! Marzipan is one of my all-time favorites. This rustic pie hit all the right notes, with a marzipan crust and sweet, spiced cinnamon apples. I made a few minor tweaks by adding more flour and almond extract to the crust. This is the perfect afternoon treat with a cup of tea! The original recipe is here.
Marzipan & Apple Pie
Ingredients
4.5 oz. marzipan
1/4 cup sugar
1 egg
½ cup flour
1 tsp almond extract
1 apple, sliced in thin wedges
1 tsp cane sugar
1 tsp cinnamon
15 pcs. almonds, chopped
Directions
In a bowl mix the marzipan, sugar, and egg using your hands. When the marzipan mixture is nice and smooth add the flour and vanilla (or almond) and knead. Butter a circular pie pan and distribute the dough in an even layer. The dough is a bit soft so have some flour on your hands while working with it. Slice apples into thin wedges. Place the apple wedges in a nice pattern and give them a gentle push into the pie dough. Mix cane sugar and cinnamon together and sprinkle over the pie and apples. Coarsely chop the almonds and sprinkle them over the pie. Bake the pie at (350 F) for about 20-25 minutes or until it has a nice and golden crust.
