Snow days in my childhood meant sledding down our neighborhood streets for hours and coming inside to warm up with hot cocoa with marshmallows and homemade chocolate chip cookies. This pie is a slice of childhood nostalgia with gooey, melty chocolate chips and toasted marshmallows. Snow is purely optional. 🍪☃️
Snow Day Cookie Pie
Ingredients
½ cup shortening (butter flavor)
½ cup butter, softened
¾ cup brown sugar
¾ cup white sugar
2 eggs
1 tsp vanilla
1 tsp baking powder
1 tsp salt
2 ½ cups flour
2 cups chocolate chips
1 cup mini marshmallows
Directions
Preheat oven to 350° F. Combine butter, shortening, and sugars together in a mixer. Add in eggs and vanilla. Mix until creamy. Turn speed to low and slowly add in baking powder, salt, and flour. Add chocolate chips. Spread dough evenly into a pie tin. Bake for 20-25 minutes or until golden brown. Remove from oven. Sprinkle with marshmallows and return to the oven for 5 minutes or until the marshmallows melt and puff up slightly. Serve warm with a cup of cocoa.
